Air Fryer Meatballs That Come Out Juicy Every Time
Jul 23, 2026

The first time I made air fryer meatballs I was skeptical. How could a little countertop fan do what a hot skillet and a good sear can do? Turns out, really well. In about 12 minutes you get meatballs with a browned, slightly crisp outside and a middle that's still tender and juicy. No splattering oil, no standing over the stove flipping each one. My kitchen doesn't smell like a fried onion for two days afterward either, which is honestly half the appeal.
Ingredient notes and swaps
I use an 80/20 beef and pork blend because the extra fat keeps things moist. Straight lean turkey works but add a splash of milk-soaked breadcrumbs so they don't dry out. Grated onion (not diced) blends in and disappears, and fresh garlic beats the jarred stuff here. Out of breadcrumbs? Crushed crackers or panko both do the job. A little grated Parmesan folded into the mix adds a savory kick that people always ask about.
Tips and common mistakes
Don't overwork the meat. Mix just until it holds together or you'll get dense, rubbery balls. Keep them uniform (a cookie scoop helps) so they cook evenly, and give them room in the basket. Crowding steams them instead of browning. Preheating the air fryer for a couple minutes makes a real difference in the crust.
Storage and reheating

Cooked meatballs keep in the fridge for 4 days and freeze beautifully for 3 months. Reheat straight from frozen at 350F for 6-8 minutes. Raw formed meatballs also freeze well, so I usually make a double batch.
Serving ideas
Toss them in marinara over spaghetti, tuck them into a sub roll with melted provolone, or serve on toothpicks with a sweet chili dip for a party.
Can I stack the meatballs?

Skip stacking. A single layer with space between each one gives you that even browning.
Do I need to flip them?
A quick shake or turn halfway through helps them color evenly, but they'll be fine either way.
How do I know they're done?
Aim for an internal temperature of 160F for beef and pork, 165F for poultry.
