Ingredients

  • 1 lb ground beef and pork blend (80/20)

Instructions

  1. Soak the panko in the milk for 5 minutes until absorbed.
  2. In a large bowl, combine the meat, soaked panko, egg, Parmesan, grated onion, garlic, parsley, salt, pepper and oregano. Mix gently just until combined.
  3. Scoop and roll into 16 evenly sized meatballs, about 1.5 inches each.
  4. Preheat the air fryer to 400F for 2-3 minutes and lightly spray the basket.
  5. Arrange the meatballs in a single layer with space between them, working in batches if needed.
  6. Cook at 400F for 10-12 minutes, shaking or turning halfway, until browned and cooked through (160F internal).
  7. Rest for 2 minutes, then serve as is or tossed in your favorite sauce.

Cooked meatballs keep in the fridge for 4 days and freeze beautifully for 3 months. Reheat straight from frozen at 350F for 6-8 minutes. Raw formed meatballs also freeze well, so I usually make a double batch.
