The trick is all in the prep. Press the water out, coat it well, and give it room to breathe in the basket. Do those three things and you're golden, literally.
Ingredient notes and substitutions
Go for extra-firm tofu. Soft or silken will fall apart and never crisp up. Cornstarch is my go-to for the coating because it creates that shatter-crisp shell, but arrowroot or potato starch work too. If you're gluten free, swap regular soy sauce for tamari. A splash of sesame oil in the marinade adds a nutty backbone that plain oil misses.
Tips and common mistakes
Don't skip the pressing. Wet tofu steams instead of crisping. Wrap it in a clean towel and set something heavy on top for at least 15 minutes. Also, don't overcrowd the basket. Cubes need space, so cook in batches if you have to. Shake halfway through so every side gets color.

Make ahead and storage
Cooked tofu keeps in the fridge for about 4 days. Reheat it in the air fryer for 3-4 minutes to bring back the crunch. The microwave will make it chewy, so avoid it if you can.
Serving ideas
Toss it in a stir fry, pile it over rice bowls, tuck it into wraps, or just eat it straight with a dipping sauce. It also makes a great salad topper.
Do I really need cornstarch?

It helps a lot. Without it you'll get firmer tofu but not that signature crispy shell.
Can I use frozen tofu?
Yes, and it gives a chewier, spongier texture. Thaw and press it well first.
What temperature is best?
400F (200C) hits the sweet spot for crisp edges without drying the center.
