I gave up on oven sweet potato fries years ago. They always turned out floppy, sad, and stuck to the pan. The air fryer changed everything. These air fryer sweet potato fries get golden edges and a genuine crunch, with soft centers that taste faintly caramelized. Twenty minutes, one bowl, and hardly any oil.
The trick that took me too long to learn: cornstarch. A light dusting pulls moisture off the surface and gives you that crackly shell you usually only get from a deep fryer.
Ingredient notes and swaps
Any orange sweet potato works, but firmer ones cut into cleaner sticks. If you can only find garnet or jewel yams (the softer, deep-orange kind), they'll still crisp up, just watch them near the end. Cornstarch is my go-to, though arrowroot does the same job. For seasoning I keep it simple with smoked paprika, garlic powder, and salt, but a pinch of cayenne or a little cinnamon-and-chili mix is worth trying.
Tips and common mistakes
Don't crowd the basket. Sweet potatoes steam instead of crisp when they're piled up, so cook in two batches if you have to. Cut the fries about a quarter inch thick and keep them even. Shake the basket halfway through, and salt them the moment they come out while they're still hot and a little sticky.

Storage and reheating
They're best fresh, honestly. Leftovers keep in the fridge for two days. Skip the microwave (it makes them mushy) and repop them in the air fryer at 375F for 3-4 minutes to bring back the crunch.
Serving ideas
Chipotle mayo, garlic aioli, or a quick honey-mustard dip all work. I love them piled next to a burger or scattered over a big salad bowl.
Why aren't my fries crispy?

Usually too much moisture or a crowded basket. Dry the cut fries well, use cornstarch, and give them room.
