One can, a little oil, twelve minutes, and suddenly you've got something that crackles like popcorn but keeps you full. The trick I learned the hard way? They stay crispy way longer if you dry them properly first.
Ingredient notes and substitutions
Canned chickpeas are the move here, drained and patted bone dry. Dried chickpeas work too, just cook and cool them first. For fat, use olive oil or avocado oil. As for seasoning, smoked paprika and garlic powder are my default, but curry powder, ranch seasoning, or a little cinnamon and sugar for a sweet batch all shine.
Tips and common mistakes
The biggest mistake is a crowded basket. Give the chickpeas room so hot air circulates, or you'll get chewy instead of crunchy. Shake the basket a couple times. And season lightly with oil BEFORE cooking, but add delicate spices after if they scorch easily.
Storage and reheating

They're best the day you make them. Store leftovers in a jar with the lid slightly open, not sealed tight, so trapped steam doesn't soften them. To bring back crunch, pop them in the air fryer for 2-3 minutes.
Serving ideas
Toss them on salads for texture, scatter over soup instead of croutons, or just eat them by the handful in front of the TV. That's usually where mine end up.
Why aren't my chickpeas crispy?

Too much moisture. Dry them thoroughly with a towel and don't overcrowd the basket.
