The first time I made air fryer jalapeno poppers I was skeptical. Poppers are supposed to be greasy and crackly and slightly dangerous to bite into, right? Turns out the air fryer nails all of that without a pot of hot oil splattering across my stovetop. You get that shattering panko crust, molten cream cheese, and a little smoky heat, and the whole thing takes about 20 minutes start to finish.

Ingredient notes and swaps
Big jalapenos are your friend here. Little skinny ones are a pain to fill and they run hotter. For the filling, full-fat cream cheese gives the richest texture, but a block of Neufchatel works if you want it a touch lighter. Sharp cheddar adds bite; pepper jack cranks up the heat. No bacon? Skip it or use crumbled cooked sausage. If you want gluten-free poppers, swap the panko for crushed gluten-free crackers or pork rinds.
Tips for the crispiest results
Pat the jalapeno halves dry before filling. Wet peppers steam instead of crisp. Press the panko firmly into the filling so it actually sticks, and give the tops a light spray of oil right before they go in. Don't overcrowd the basket. Leave a little space so the air moves. And a heads up: wear gloves when you seed the peppers, or you'll regret rubbing your eye an hour later.
Make-ahead and storage

You can assemble these a day ahead and keep them covered in the fridge, then air fry straight from cold (add a couple minutes). Leftovers keep 3 days. Reheat in the air fryer at 350F for 4-5 minutes to bring back the crunch. The microwave makes them sad and rubbery.
Serving ideas
Serve with ranch or a cool sour cream dip to tame the heat. They're great alongside wings, sliders, or a game day spread. For a party, halve the peppers even smaller for two-bite poppers.
How spicy are these?
Medium, mostly. Removing the seeds and white ribs takes out most of the burn. Leave some in if you like it hot.

Do I need to preheat the air fryer?
A quick 3 minute preheat helps the crust set faster, but it's not essential.
Can I make them without breadcrumbs?
Yes. Wrap each filled half in bacon instead, or just top with extra shredded cheese for a low-carb version.
Why is my filling leaking out?
Usually overfilling or peppers that weren't dried. Fill level with the edge and pat them dry first.
