For oil, a tablespoon or two of a neutral high-heat oil (avocado, canola, or plain vegetable) is plenty. Olive oil is fine but can taste a bit strong at these temps. Salt after cooking, always, or it draws out moisture and steams your fries.
Tips for the crispiest results
Soak the cut potatoes in cold water for at least 30 minutes. This pulls out surface starch and it genuinely makes a difference. Dry them like you mean it afterward, a clean towel and real effort, because water is the enemy of crisp.

Don't crowd the basket. Fries need room for air to move around them. If you pile them in you'll get pale, floppy results. Cook in batches, shake halfway, and you'll be rewarded.
Storage and reheating
Fries are best hot, but leftovers reheat surprisingly well. Pop them back in the air fryer at 375F for 3-4 minutes and they crisp right up. The microwave, sadly, just makes them sad and rubbery.

Classic ketchup never fails, but try garlic aioli, a shake of smoked paprika, or grated parmesan and parsley tossed on while they're still hot.
