The first time I made air fryer cauliflower, I couldn't believe how fast it went from sad, pale florets to golden, crispy-edged bites that my kids fought over. No soggy tray. No 40 minutes of babysitting the oven. Just a hot little box doing what it does best.
The trick is dry cauliflower and enough oil to help the edges caramelize. Get that right and you'll have something that tastes almost like roasted cauliflower's better-looking cousin, with those charred tips that everyone reaches for first.
Ingredient notes and swaps
Fresh cauliflower beats frozen here, hands down. Frozen releases too much water and steams instead of crisping. If frozen is all you've got, thaw it completely and pat it bone dry. For oil, olive or avocado both work. Skip cooking spray straight on nonstick baskets; toss the florets in oil in a bowl instead. Smoked paprika, garlic powder, and a pinch of cayenne are my go-to, but curry powder or grated parmesan at the end are both fantastic.
Tips and common mistakes
Don't overcrowd the basket. Cauliflower needs breathing room to crisp, so cook in batches if you have to. Cut florets to a similar size so they finish evenly. And shake the basket halfway through so every side gets some heat.

Storage and reheating
Leftovers keep 3-4 days in the fridge. Reheat in the air fryer at 375F for 3-4 minutes to bring back the crunch. The microwave will only make them mushy.
Serving ideas
Dunk them in ranch, garlic aioli, or a spicy buffalo sauce. They also make a great taco filling or a side next to grilled chicken.
Do I need to boil the cauliflower first?

Nope. Raw florets go straight in. Boiling adds water you don't want.
Why isn't mine getting crispy?
Usually too much moisture or a crowded basket. Dry it well and cook in single layers.
Can I make it without oil?
You can, but it'll be drier and less golden. A light toss makes a big difference.
